Bareilly Ki Barfi
30 - 45 home temperature & refrigerator 20 - 25 minutes
1/2 cup milk
1/2 cup ghee (clarified butter)
1/4 tsp cardamom powder
A pinch of salt
1 tbsp chopped pistachios and almonds (optional)
**For garnishing**:
1 tbsp desiccated coconut
1. Heat ghee in a heavy-bottomed pan on low-medium flame.
3. Ensure there are no lumps by stirring consistently.
1. Lower the heat and slowly add the milk. Stir vigorously to avoid lumps.
2. Add powdered sugar, cardamom powder, and a pinch of salt. Mix well.
3. Keep stirring until the mixture thickens and starts leaving the sides of the pan.
Step 3:
Set the Barfi
1. Grease a square or rectangular tray with ghee. Pour the cooked mixture into the tray and spread it evenly using a spatula.
2. Sprinkle chopped pistachios, almonds, and desiccated coconut on top. Press them gently so they stick.
3. Let it cool completely at room temperature or refrigerate for faster setting.
Step 4:
Cut and Serve
1. Once set, cut the barfi into square or diamond shapes using a sharp knife.
2. Optionally, decorate with edible silver leaf for an authentic look.
Ensure the besan is roasted well to avoid a raw taste.
You can add a splash of rose water for an aromatic twist.
