Simple Chicken soup
- 1chicken breasts (boneless and skinless)
- 3 medium carrots, sliced
- 4celery stalks, sliced
- 5garlic cloves, minced
- cups chicken broth
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or fresh thyme sprigs
- 1 bay leaf
- 1 cup egg noodles (optional)
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions:
- Dice the chicken breasts into bite-sized pieces.
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, celery, and garlic. Sauté for 3-4 minutes until softened.
- Add the diced chicken to the pot and cook for 5-6 minutes until slightly browned.
- Pour in the chicken broth. Add thyme, bay leaf, salt, and pepper. Stir well.
5. Simmer the Soup:
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 15 minutes.
6.Add Noodles (Optional):
- If using noodles, add them to the soup and cook for another 8-10 minutes until tender.
7.Finishing Touches:
- Remove the bay leaf. Taste and adjust seasoning if needed.

- Ladle the soup into bowls and garnish with fresh parsley if desired.
